I've heard lots of great things about Aix-En-Province. Quaint, colorful, and traditional. I did a quick day trip from Marseille (it's only about 30min by bus) but it was enough to spend a great afternoon. As you may know, this is the city where Cezanne used to have his atelier and I absolutely love his works. With all the colors and the greenery in this city, I can very well see how he got his inspiration
